Grenada Banana Bread Recipe

We make this banana bread recipe often, whether we have a glut of bananas or not. It’s great for our buffet breakfast table, moist, delicious and fills a gap. Guests will ask for it with a cup of tea or coffee for an afternoon snack to keep them going. Swimming in the pool or the beach can certainly work up an appetite.

It’s easy to make and you won’t even need a mixer. Just some basic baking ingredients and you’re all set. Egg, ripe bananas, vanilla, baking soda, flour and sugar.

Our banana bread is easy to make. You can add extra bananas or sugar to make it match your taste. As I said, there’s no need for a mixer, just a wooden spoon or a fork is enough for a good mix.

Alternatively, you can add extra ingredients such as chocolate chips, rains or chopped nuts.

Even before the hotel was open, Philip and Annie used to make this banana bread to eat over their plans and shopping lists.

Recipe for our Banana Bread Loaf

Preparation time: 10 minutes

Cooking time:   55 minutes

You’ll just need one bowl for this and it makes one loaf.

Bananas that are overripe are the best bananas for this recipe. It doesn’t matter if the fruit has gone a bit squidgy and has started to turn brown.

Ingredients:

2 or 3 ripe bananas

50g/1/3 cup melted butter

1/2 tsp baking powder

1 tsp bicarbonate of soda

1 tsp vanilla essence

Pinch of salt

200g or 100g if you’d like less sweet 1 cup, 3/4 cup or ½ cup sugar

200g (1 ½ cups) flour

1 large egg

Instructions:

Preheat oven to gas mark 4, 350F or 175C and butter a loaf tin.

Mash the ripe bananas in a mixing bowl until smooth and stir in the melted butter.

Mix in the baking powder, bicarbonate of soda and salt. Now stir in the sugar and add the egg and vanilla extract. Add the flour and mix.

Now pour your batter into your loaf tin. Put it into the oven. Now, bake it for between 50 minutes to 1 hour. You can test it with a knife to see if it comes out clean. If it does, it’s ready.

Remove from the oven and allow to cool for a few minutes in the pan. Now remove it from pan and allow to cool completely before serving. We recommend using a bread knife for slicing for a cleaner cut.
